Sides & Salads
Family Favorites
Occasionally a downsized version of the recipes below finds their way onto our weekly menu – sometimes more than once. However, most of the sides and salads below are second-choice items for pot lucks, family gatherings, and other special occasions. (They are second choice right after my world famous desserts of course.) Apparently you bring just one dried out, tasteless meatloaf and you are branded for life. I tried to tell Albert but he just wouldn’t listen. He can be so bullheaded – takes after someone else I know.
More than likely, there probably won’t be a lot of recipes listed in this section of Favorite Recipes. That said, check in from time to time. You just never know when a new recipe has been added to the list.
More Thoughts on Sides and Salads…
Sides and salads can elevate most any meal to a whole other level. That said they do have their limits – they are not miracle workers. Case in point, sad to say, a dried out, tasteless meatloaf is still a dried out, tasteless meatloaf. Okay, I digress. After all, Albert’s learned his lesson – fingers crossed.
It seems the tricks for modernizing an old, tried-and-true recipe are limitless. Add a little Gouda cheese, sprinkle in a handful of pecans and craisins, and voilà. Likewise, add a can of your favorite seafood – tuna, salmon, sardines, smoked oysters, crabmeat. Suddenly the mundane is now the latest crowd-pleaser. And not surprising, you are the one that’s taking home a blue ribbon and an empty dish.
Then there are the seasonal sides and salads. You can make cold, easy-to-make salads for the summer months. Once again, a handful of seasonal berries and the crowd goes wild. Similarly you can make sweet potatoes, cranberries, and dressing for the end-of-the-year holidays. All of which can be made a variety of ways.
