Our Favorite Food Ethnicity
Choosing to retire in southern New Mexico was an easy decision. Judy and I were already huge fans of the Mexican cuisine. As if one couldn’t tell by the heavy presence of Mexican main dishes. And I remind myself often that moving anywhere else would have meant not having Albert in our lives. Not having Albert in our lives would have been a loss I cannot fathom.
Additionally, we were tired of mowing the grass, raking the leaves, and shoveling the snow. Every winter, at least half a dozen times, Judy says she doesn’t miss the snow one tiny bit. Oh yeah, I almost forget, our only child moved to New Mexico a few years prior to our move. Truth be known, it was probably decided that we would retire in New Mexico long before I decided.

In a commercial for a major auto insurance company, Mara is speaking at a graduation ceremony. Whereupon she mentions probably my singular biggest source of decision fatigue. Each and every day, I must figure out what to fix for dinner. And the next day I’ll have to figure out what to fix for dinner again, and again, and again. No wonder old people go out to eat so often.
According to a Google search, popular main dish options include pan-fried steak, lasagnas, roasted chicken, and slow-cooker pork chops. I doubt very many old couples fix any of those items on an occasional basis, let alone a regular basis.
That said, I do air fry on a regular basis. And slow-cook is an appealing option that has recently caught my attention as well. Needless to say, another favorite solution is one-pan meals. I will choose a meal that is easy to make and easy to clean up afterwards any day. They are a win, win.
