White Chicken Chili
Intro and Overview…
This is one of my sister’s go-to soup recipes. While the original white chicken chili recipe called for cooking and then shredding the chicken, we prefer using rotisserie or pre-shredded chicken. The original recipe also called for nondescript green chilies, but we know that when it comes to green chilies, Hatch Green Chilies are a must. Yeah, when you live in the Southwest, you know these things.
Stuff You Need…
- 4 Cups Chicken, cooked and shredded
- 4 Cups Chicken Stock
- 1 Clove Garlic, minced
- 1 Med White Onion, diced
- 1 Can White Beans, drained
- 1 Can Hatch Green Chilies
- 1 tspn dried oregano
- 1 tspn ground cumin
- 1 tspn chili powder
- 1 tspn kosher salt
- 1 tspn black pepper
- 1 tspn fresh oregano, chopped
And Then…
Add chicken and chicken stock to a large pot. Add garlic, onion, beans, chilies, dried oregano, cumin, chili powder, salt, pepper, and fresh oregano.
Simmer over medium-low heat for about five minutes. Season to taste.
