Bean, Beef, and Corn Nachos
Intro and Overview…
Oh, yeah. One skillet (and a baking sheet), Mexican cuisine, and melty cheese. What’s not to like about bean, beef, and corn nachos? And I might add, bean beef and corn nachos go great with your favorite Mexican beverage.
Stuff You Need…
- 1 lb Ground Beef
- 1 packet Taco Seasoning
- 1 1/2 Cups Corn, frozen or can, drained
- 1 15-oz can Black Beans, rinsed and drained
- 2 Cups Mexican or Fiesta Blend Cheese, shredded
- Tortilla chips
- Toppings (optional): Salsa, Sour Cream, Guacamole, Green Onions
And Then…
Cook and crumble ground beef in a skillet over medium-high heat. Add seasoning generously while the meat is cooking, stir to blend. Drain liquid as needed. Add corn and beans, stir to combine. Cover with a lid and cook for a couple of minutes, until everything is warm.
Preheat oven to 350 degrees. Spread tortilla chips on a large baking sheet. Top with the meat mixture. Sprinkle with cheese and bake for 10-15 minutes, until cheese has melted.
Add toppings and enjoy
