Oatmeal Craisin Cookies
Intro and Overview…
Our go-to cookie whenever we are bringing a dessert, regardless of the function, big or small, has always been oatmeal craisin cookies.
Stuff You Need…
Dry Ingredients:
- 2 Cups All-Purpose Flour
- 1 tsp Baking Powder
- 1 tsp Baking Soda
Wet Ingredients:
- 1 Cup Salted Butter, softened
- 1 Cup Sugar
- 1 Cup Brown Sugar, firmly packed
- 2 Large Eggs
- 2 tsp Vanilla
And Then:
- 3 Cups Oats (not instant)
- 1 Cup Craisins
And Then…
Preheat oven to 350 degrees.
Whisk dry ingredients and set aside. In a separate bowl, combine wet ingredients on low, then increase speed and cream until fluffy and lighter in color.
Stir dry ingredients into wet ingredients until no flour is visible – don’t over mix. Add oats and craisins, stirring until well blended.
Use #40 Cookie Scoop (about 2 Tbsp.) and place dough 2 inches apart on baking sheet – use silicone baking mats, parchment paper, or nonstick spray.
Bake for 11 to 13 minutes on the center rack. Allow cookies to cool for a couple of minutes before transferring to a wire rack.
