Graham Cracker Pudding

Intro and Overview…

Graham cracker pudding is probably THE recipe that takes me back to a time of innocence. I can still see the smile on my face when Mom pulled this finished dessert from the oven. I am quite sure my smile rivaled that of Ralphie Parker when he unwrapped a Red Ryder air rifle on Christmas morning.

 

Stuff You Need…

  • 2 Packages of Graham Crackers
  • 3/4 Cup Brown Sugar
  • 1 1/2 Sticks Butter – melted
  • 3 Eggs – separated
  • 2 Packages Jell-O Vanilla Pudding (Not instant)
  • 4 Cups Milk
  • 3 Tbsp. Sugar

 

And Then…

Preheat oven to 425 degrees.

Crush graham crackers and then mix with sugar. Add melted butter and mix until well blended. Press evenly into the bottom of an 8 x 12 baking dish.

In a medium saucepan, whisk together vanilla pudding, egg yolks, and milk until smooth. Bring to a boil over medium heat, stirring constantly. Pour over graham cracker crust.

Beat the egg whites with sugar until frothy, then spread over the top of the pudding. Bake until the meringue is light brown.
