Slow Cooker Creamed Corn
Intro and Overview…
Yes, you can buy creamed corn in a can. No, no, and heck no – that stuff in a can won’t even come close to the taste of this creamed corn. And you know, whenever anybody shows up with a slow cooker in hand, the room fills with smiles as everyone says, “Mmm, what did you make?”
Stuff You Need…
- 48 oz. Corn, frozen but thawed (about 8 Cups)
- ½ Cup Half & Half
- 10 oz. Cream Cheese, in chunks
- 4 Tbsp. Butter, sliced
- 2 Tbsp. Sugar
- Kosher Salt and Pepper
- Chives, for garnish (optional)
And Then…
Pour half and half into a blender with 1 cup of corn. Puree until smooth. In a 3 quart or larger slow cooker, add the remaining ingredients and the just pureed mixture. Cover and cook over high heat for 1 ½ hours or low heat setting for 3-4 hours.
Stir the corn to incorporate the melted cream cheese and butter. Season with more kosher salt or pepper to taste and garnish with chopped chives if desired
