Coleslaw
Intro and Overview…
If I am making coleslaw from scratch (or at least mostly scratch), it’s for a special occasion. A family gathering or a potluck. Otherwise, it’s the store-bought coleslaw, quick and easy. Then again, this recipe is pretty quick and pretty easy. Albert could do this one by himself if I could trust him in the kitchen alone. The original recipe can be found here. We doubled all ingredients in expectation of a larger group at the chow line.
Stuff You Need…
- 2 16-oz bags Coleslaw Mix
- 1 Cup Mayonnaise or..
- 1/2 Cup Mayonnaise and 1/2 Cup Horseradish Sauce
- Salt and Pepper, to taste
- 1 small can Pineapple Chunks, drained and halved (optional)
And Then…
Combine all dressing ingredients in a large bowl.
Add coleslaw mix and crushed pineapple, then mix with a spatula until evenly blended.
Okay, people, just kidding. Glove up, and I don’t mean your shoveling-snow gloves, and toss and mix until well blended.
Feel free to add a little bit more mayo and/or horseradish sauce if you prefer a wetter coleslaw.
